Meringue is a sweet preparation made with egg white and icing sugar, typical of Italian cuisine.
Dolceria Alba’s Meringata respects classic Italian tradition with fragrant meringues and cream and has become the most appreciated cake in the world among the creations of our pastry chefs, to the point of being proposed in many formats and different flavours.

WHITE AND SOFT LIKE SNOW, A FEW KNOW THAT THIS SPECIALTY OWES ITS NAME TO SWISS TOWN “MEIRINGEN”.

A RECENT CURIOSITY: IN 1985, IN MEIRINGEN, THE LARGEST MERINGUE IN THE WORLD WAS MADE, IT WAS 2 METERS AND A HALF LONG, 1 METER AND A HALF WIDE AND 70 CENTIMETERS HIGH.

MERINGUES WON THE HEARTS OF QUEENS: THEY SAID THAT MARIE ANTOINETTE PREPARED THEM WITH HER OWN HANDS AND THAT ELIZABETH I WAS SO DELIGHTED WITH THEM TO RENAME THEM “KISS”.

THE ORIGIN OF THIS DESSERT ARE PROBABLY TO BE TRACED IN SWITZERLAND IN THE EIGHTEENTH CENTURY, WHEN ITALIAN PASTRY CHEF GASPARINI PREPARED IT TO CONQUER THE HEART OF PRINCESS MARIA, BETROTHED TO KING LOUIS XV.
